The ground-based cuisine, simple and genuine, it follows the tradition of typical tuscan flavors, with particular attention to the use of local products and scents of the hills around of Camaiore; following the seasonality of the products, the menu can offer recipes from Lucca and tuscan tradition giving space to innovation and research cuisine.
Starting from the starters, the tavern offers a selection from Camaiore area cold cuts and cheeses from our own, the shepherds of the north of Tuscany accompanied by small cooked dishes, crostini with baked vegetables.
The first courses start with the inevitable tordelli ragu, followed by fresh pasta sauces juxtaposed with hunting, backyard and sometimes poor fish. Winter dishes such as onion soup au gratin or pink-made potato gnocchi creamed all ’blue cheese, give way in summer to testaroli celery pesto and carbonara citrus or vegetable.
The second courses, mainly meat ranging from cinta senese or grilled chianina meat or more typically Tuscan dishes such as wild boar, the peposo, the rabbit with prunes or the roasted baccalà. The baked milkpork, fassona tartar joke knife or dishes from the international perfumes often do not cease out of the menu.
Always present plates also suitable for the vegetarians (on request also dishes for vegans and celiacs).
The wine list offers a fine selection of wines from the tuscan territory starting from the hills of Lucca, Montecarlo and the Garfagnana, companies outside of Pisa up to the wines of southern Tuscany such as Bolgheri, to Rossi Toscani classics plus a wide choice of white and red wines from all over the Italian territory. Numerous proposals also bio-dynamic wines.
